11 cups of water, divided
3 Tbs. coconut oil
3 cups uncooked Carolina Gold rice
2 Tbs. butter
Light salt to taste
Add eight cups of water to the bottom of a Charleston rice cooker, then pour the remaining three cups in the top. Add the coconut oil to the top water (this is the secret ingredient—it makes for delicious reheated rice). Add the rice to the top water-coconut oil mixture. Bring the cooker to a boil, then simmer, covered, on low heat for 25 minutes. Remove from heat, add butter and salt to taste, and fluff to combine.
