Jimmy Red corn is central to the story of High Wire Distilling Co., which celebrates its 10th anniversary this month. The onetime moonshiner’s corn was nearly extinct in the early aughts when a farmer with just two cobs began the arduous process of cultivating a crop. Today, the company distills the heirloom into its prized flagship Bourbon.
