Order a pour-over and look on as tweedy baristas conduct what appears to be a tasty science experiment, pouring hot water into cone-shaped coffee drippers that trickle Intelligentsia java into clear vessels resembling lab-issued beakers. The staffers are artists, too—their lattes, often topped with feathers, leaves, or hearts drizzled in foamy milk, are among the prettiest we’ve seen. 766 S.
